I found these interesting recipes with ground elders - I am sure going to try them:

Ground elder pizza:
2 dishes of filo-calzone.
Chop and stir ½ fennel, ½ pepper, ¼ broccoli, 8 sugar peas, 3 spring onions, 1 handfull of fine chopped weeds ( f.ex. the new small leaves of ground elders), 1 sp. Of herbes de provence, a little salt and pepper and 3 sp of olive oil – crumble 100 g. of feta cheese in it.
Place 2 double filo pieces on a piece of baking paper. Place the filling on the dough. Fold the dough to make it an open calzone.
Bake about 15 minutes at 175 celcius. serve with a spoonful of yoghurt.

Focaccia with weeds.
15 grams of yeast, 2 dl lukewarm water, 1 tea sp. honey coarse salt, 1 sp. chopped weeds ( ground elder or nettles), 4 dl flour, add whatever herbs you feel like dissolve the yeast in the water, pour in 3 sp. Olive oil, honey, a little salt, and the weeds. Stir with the flour. Let the dough raise. Pour olive oil in a form, press the dough in it. pour a little oil on the top, sprinkle with salt and good herbs. let raise about 10 more minutes . Bake at 200 Celsius for about 12 – 15 minutes
